Vegan Braised Endive

Endive, as a general rule is very bitter raw. I had it raw a few years ago and didn’t like it, but I read recently that the French frequently cook it, thus reducing the bitterness and bringing out some of the more subtle flavors.

I can’t say my truffles turned out quite so creative as those in Cape Cod, but they are dark, rich and creamy and would be perfect to give to that special someone (even if that special someone is yourself).

In years past I’ve gone the easy route and just created pre-packaged drinks with the most effort being that I boil water. But this year I want to allow myself a little decadence. Those little bags of powdered flavorings and sugar just don’t equate being pampered if you ask me.

Vegan Peanut Butter Chocolate Cheesecake with a Shortbread Crust

I think that this cheesecake turned out nicely. It had a delicate flavor and it was a more balanced cheesecake than some of the ones I’ve made in the past. Overall I’m pretty pleased with the results and would probably make this exact version again.

Vegetarian Udon Noodle Soup

While I do prepare some Asian foods at home on occasion, I admit that I am still a little wary that I don’t understand how to cook it well enough. That said, I am really fortunate to live so close to multiple Asian markets, and I feel that I am slowly stretching my culinary wings.
